Poached Peaches & Porridge

It’s almost peach season!! Hurrah! If, like me, you haven’t been able to wait that long and have some less than ripe peaches, this is a great way to use them up. This recipe is pure comfort food packed with flavour - a delicious addition to porridge, pancakes or yoghurt & crushed nuts for a delicious breakfast, snack or dessert. Whilst honey is not recommended for under ones, this recipe uses baby friendly maple syrup and can be eaten by the whole family. 

 

Ingredients

  • 400ml water
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon maple syrup
  • 1 peach

Method 

  1. Boil your kettle and measure out 400ml in a pan. 
  2. Add your peach and leave for 2 minutes. 
  3. Take out the peach using a slotted spoon, cut in half and peel off the skin - it should come away easily - and remove the stone. 
  4. Add the peach back in to the water alongside the other ingredients and simmer for 15 minutes. 
  5. Remove the peach and boil the remaining liquid on a high heat for 5-10 minutes until it’s reduced by a third for a delicious syrup. 

 

Top Tip: Have a whole punnet of peaches to use? Why not batch cook and freeze some? You could also puree half of them once cooked and pour into ice lolly moulds for a treat on a sunny day.
